Surf & Turf Skewers (makes 4)

Ingredients

  • 5.8oz-165g raw king prawns
  • 8oz-227g rump steak (evenly diced into 12 pieces, fat trimmed off)
  • 1 red pepper (deseeded and chopped into 8 even chunks)
  • 1 red onion (diced into 8 even chunks -at least 2 segments together per chunk)
  • 7.9oz-225g halloumi cheese (8 even chunks)
  • 4 skewers
Prawn Marinade
  • ½ dry chicken stock cube (crumbly)
  • 1 tablespoon olive oil
  • Pinch of salt
  • 2 teaspoons garlic puree
  • 1 teaspoon cayenne pepper
  • ½ teaspoon dried parsley
  • 1 tablespoon white wine vinegar
Steak Marinade
  • 1 dry beef stock cube (crumbly)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic puree
  • ½ teaspoon dried parsley
  • 1 tablespoon red wine vinegar
  • ½ teaspoon ground coriander

Method

  1. To start, the prawns and steak bites need to marinade separately for 6 hours. In a small mixing bowl, combine all of the ingredients for the prawn marinade and combine using a spoon. Add the prawns and give everything a good mix to ensure the prawns are all coated. Cover the bowl with cling-film and pop in the fridge for 6 hours. Move straight on to the steak marinade
  2. To make the steak marinade, in a small mixing bowl, combine all of the ingredients for the steak marinade and combine using a spoon. Add the steak and give everything a good mix to ensure the meat is coated. Cover the bowl with cling-film and pop in the fridge for 6 hours
  3. If using wooden skewers- fully cover them with water and leave to soak for at least 30 minutes before moving onto the next step
  4. Remove the prawns and steak from the fridge and set to one side. Have the prepared halloumi, pepper and onion in front of you also- forming an assembly line. Pre-heat oven to 428˚F/220˚C regular oven or 394˚F /200˚C fan assisted oven
  5. To assemble your first skewer, pierce the skewer through the middle of a prawn until the sharp end is near the top. Follow by adding an onion segment, piece of steak, pepper, prawn, halloumi, onion, steak, pepper, prawn, halloumi, steak, prawn. Pop onto the roasting rack and continue to make the next 3 skewers, following the same process
  6. To summarise- each skewer should have: - 4 prawns - 3 steak - 2 halloumi - 2 pepper - 2 onion
  7. Pop the skewers into the pre-heated oven for 10 minutes. Remove from the oven and serve. Enjoy whilst hot
