Sticky Sausage in Bacon©


  • 10.5oz-300g streak smoked bacon (scored down the middle of each slice)
  • 14.1oz-400g pork sausages (6 or 7 good quality)
  • 1 tablespoon dark brown soft sugar
  • 2 tablespoons olive oil
  • 2 teaspoons hot chilli powder
  • 1 tablespoon English mustard
  • 1 tablespoon honey
  • 12-14 cocktail sticks
  • ½ tablespoon dried rosemary
  • 1 tablespoon brown sauce
  • 1 garlic clove (crushed)


  1. Pre-heat oven to 394˚F/200˚C regular oven or 356˚F /180˚C fan assisted oven. Wrap a piece of bacon all along each sausage and pierce in place at each end using a cocktail stick to secure the bacon properly. Set to one side
  2. Place all of the remaining ingredients into a mixing bowl and combine. Coat each sausage and bacon parcel in the sticky marinade and place on the roasting rack. Pop into the oven for 15 minutes. Remove from the oven and using a spoon or pastry brush, coat each parcel in the marinade one last time. Pop back into the oven for a final 25 minutes
  3. Remove from the oven, serve, enjoy hot or cold
