Ingredients
Burgers
- 28.2oz-800g minced turkey (2% fat)
- Zest and juice of 1 lemon
- 1 egg yolk (free-range)
- 1 teaspoon salt
- 2.1oz-60g panko breadcrumbs
- ½ tablespoon Worcestershire sauce
- ½ teaspoon mustard powder
- ½ teaspoon black pepper
- 1 tablespoons chilli sauce
- 1 dry/crumbly chicken oxo cube
- 1 tablespoon light soy sauce
- ½ teaspoon dried chilli flakes
Other
- 4 brioche burger baps
- Shredded lettuce
- Sauce of your choice
Method
- Add all of the ingredients of the burger ingredients to a large mixing bowl and using your hands, squish and mix until everything is fully mixed in with the turkey.
- Separate into 4 equal portions. Roll each portion into 4 individual balls using your hands. Flatten and shape the ball using your hands into a large burger shape- at least the circumference of the palm of your hand, if not bigger. Repeat this process until you have 4 burgers. Pop into the fridge for one hour
- Pre-heat oven to 394˚F/200˚C regular oven or 356˚F /180˚C fan assisted oven
- Remove the turkey from the fridge and in a frying pan with a little oil, over a medium/high heat, sear on both sides for 1 ½ minutes. Pop the burgers onto the roasting rack that has been lightly sprayed or rubbed with oil
- Place burgers into the oven for 15-20 minutes. Remove from the oven and allow to rest for 2 minutes. Assemble the burgers to your preference and serve whilst hot
