Pear & Almond Slices (Diabetic Friendly)


Cake Ingredients
  • 2 medium eggs (free-range)
  • 1 teaspoon baking powder
  • 1.7oz-50g apple sauce
  • 11.2oz-320g wholemeal self-raising flour
  • 1.6 fl oz-50ml vegetable oil
  • 0.3oz-10g sugar alternative
  • 2 tablespoon ground almonds
  • ½ teaspoon vanilla extract
  • 3 ripe pears (peeled, cored and thinly sliced)
  • 1 teaspoon sugar alternative
  • 1.4oz-40g flaked almonds


  1. Pre-heat oven with an over tray inside to 356f/180˚c regular oven or 320˚f /160˚c fan assisted oven. Grease a 20cm/8" square cake tin and set to one side
  2. In a large mixing bowl, beat the eggs together with the sugar alternative, vegetable oil, vanilla essence, ground almonds and apple sauce using an electric hand-whisk or stand mix. Add the sifted flour and baking powder and mix again
  3. Pour the cake batter into the pre-prepared cake tin and smooth out evenly. Apply the topping by placing the slices of pear as a layer on top of the cake mix evenly. Follow by sprinkling the flake almonds on top and finish by sprinkling the teaspoon of sugar alternative on the top
  4. Pop into the oven for 25 minutes (or until you can insert a skewer into the middle and it comes out clean). Allow to cool in the tin before removing
  5. Cut into slices and enjoy
