Cake Ingredients
- 2 medium eggs (free-range)
- 1 teaspoon baking powder
- 1.7oz-50g apple sauce
- 11.2oz-320g wholemeal self-raising flour
- 1.6 fl oz-50ml vegetable oil
- 0.3oz-10g sugar alternative
- 2 tablespoon ground almonds
- ½ teaspoon vanilla extract
Topping
- 3 ripe pears (peeled, cored and thinly sliced)
- 1 teaspoon sugar alternative
- 1.4oz-40g flaked almonds
Method
- Pre-heat oven with an over tray inside to 356f/180˚c regular oven or 320˚f /160˚c fan assisted oven. Grease a 20cm/8" square cake tin and set to one side
- In a large mixing bowl, beat the eggs together with the sugar alternative, vegetable oil, vanilla essence, ground almonds and apple sauce using an electric hand-whisk or stand mix. Add the sifted flour and baking powder and mix again
- Pour the cake batter into the pre-prepared cake tin and smooth out evenly. Apply the topping by placing the slices of pear as a layer on top of the cake mix evenly. Follow by sprinkling the flake almonds on top and finish by sprinkling the teaspoon of sugar alternative on the top
- Pop into the oven for 25 minutes (or until you can insert a skewer into the middle and it comes out clean). Allow to cool in the tin before removing
- Cut into slices and enjoy
