Parmesan Crusted Beef


  • Large roast beef joint (35oz-1kg)
  • ½ tablespoon freshly ground black pepper
  • 3.5oz-100g fresh breadcrumbs
  • 2.1oz-60g fresh grated parmesan cheese
  • 1 crushed garlic clove
  • ½ small onion (blitzed into a paste)
  • ½ tablespoon dried thyme
  • ½ tablespoon mustard powder
  • 1 ½ tablespoon olive oil
  • Salt


  1. Pre-heat oven to 464˚F/240˚C regular oven or 428˚F /220˚C fan assisted oven. Rub the beef joint in ½ tablespoon of the olive oil, salt and pepper. Place on the roasting rack/pan and pop into the oven for 20 minutes
  2. Combine the remaining ingredients in a large mixing bowl to make the parmesan crumb. Pat onto the beef after it has cooked for 20 minutes, reduce the oven temperature to 356˚F/180˚C regular oven or 320˚F /160˚C fan assisted oven, baste with the juices and pop the beef back in for a further 20 minutes
  3. Using a meat thermometer, check the beef is cooked at a temperature showing at least 266˚F /130˚C. Leave to rest for 20-30 minutes and serve
