Irish Cream Muffins (makes 12)

Ingredients

Muffin Mix
  • 7 oz-200g baking margarine
  • 7 oz-200g golden caster sugar
  • 3 medium eggs (free-range)
  • 9 oz-250g self-raising flour (sifted)
  • ½ teaspoon baking powder
  • 5 fl oz-150ml Irish cream liqueur
  • 4 oz-100g dark chocolate chips
  • 4 fl oz-100ml cold espresso/black coffee
Irish Cream Topping
  • 5 oz-150g milk chocolate (broken up)
  • 2 fl oz-50ml double cream
  • 3 medium eggs (free-range)
  • 4 oz-100g unsalted butter
  • 5 oz-150g icing sugar (sifted)
  • 4 fl oz-100ml Irish cream liqueur
Decoration (optional)
  • Irish cream mini truffles
  • Triple choc curls

Method

  1. Start by making the topping as it will need at least 3-4 hours to set. In a small saucepan add all of the 'topping ingredients' apart from the icing sugar. Set over a low heat and continually stir until everything is melted and fully combined. Remove from heat and stir in the icing sugar
  2. Pour mix into a large mixing bowl. Cover and pop in the fridge for at least 3-4 hours. Stir at intervals
  3. When ready to bake, pre-heat oven to 392˚f/200˚c regular oven or 356˚f /180˚c fan assisted oven
  4. Grease a 12-hole muffin pan or line a regular muffin pan with cases and set to one side
  5. In a large mixing bowl, cream together the stork and sugar using an electric whisk until light in colour and well combined. Add the eggs one at a time, combining well between each addition
  6. Add the Irish cream and coffee and mix again. Follow with the flour and baking powder and combine one last time with the hand mixer
  7. Finally, add the chocolate chips and stir with a metal tablespoon until evenly distributed. Spoon equally into the pre-prepared tin and pop into the oven for 20/25mins. Check with a skewer in the centre of one, if it comes out clean- they are ready
  8. Remove from oven and allow to cool in the tine for 10 mins before removing and allowing to cool completely
  9. When completely cool, using a small baking spatula or a normal knife, decorate the tops of the muffins with the prepared topping
  10. Decorate with the truffles and flakes or however you fancy
