Ingredients
- 2 fillet steaks (11.6oz-330g)
- 1 tablespoon olive oil
- 1 teaspoon black pepper
- Pinch of salt
- 1 beef stock cube (dry/crumbly)
- 6 slices prosciutto ham
- 2 tablespoons hot horseradish
- 1 teaspoon dried basil
- ½ teaspoon garlic paste
- 4 cocktail sticks
Method
- Pre-heat oven to 428˚F/220˚C regular oven or 392˚F /200˚C fan assisted oven
- In a large mixing bowl, combine the oil, dry stock cube, salt, pepper, garlic paste and basil- mix together to form a paste before completely covering the steaks in the rub. place the steaks on a flat surface
- Spread 1 tablespoon of the horseradish all over each of the steaks until it has all been used. Next, wrap 3 slices of prosciutto ham around each fillet of beef until it is totally covered. Secure at both ends using a cocktail stick
- Transfer the beef fillets to the roasting rack and pop into the oven for 20-25 minutes (depending on how you like your steak cooked)
- Remove the fillets from the oven, check the internal temperature using a meat thermometer for a reading of 159˚F 71˚C (for medium-well). Set to one side and rest for 5 minutes before serving
