Goulash Skewers (makes 4)

Ingredients

Steak & Veg Marinade
  • 10.5oz-300g sirloin steak (evenly diced into 12 pieces, fat trimmed off)
  • 1 red pepper (deseeded and chopped into 8 even chunks)
  • 1 onion (diced into 8 even chunks -at least 2 segments together per chunk)
  • 4 skewers
  • 1 dry beef stock cube (crumbly)
  • 1 teaspoon plain flour
  • Pinch of salt and black pepper
  • ½ teaspoon marjoram
  • 1 tablespoon garlic powder
  • 3 tablespoons paprika
  • 1 tablespoon cayenne pepper
  • 2 tablespoons tomato puree
Potato Mix
  • 1 large red potato (peeled & cubed into 16 even chunks, part boiled for 10 minutes)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried parsley

Method

  1. To start, the veg and steak bites need to marinade in the same bowl for 24 hours. In a medium mixing bowl, combine all of the ingredients for the steak and veg-combine using a spoon to ensure everything is coated. Cover the bowl with cling-film and pop in the fridge for 24 hours. Move straight on to the steak marinade
  2. To make the potato mix, in a small mixing bowl, combine all of the ingredients and gently combine using a spoon (very gently so you don’t break up the potatoes into a mash). Cover the bowl with cling-film and pop in the fridge for 24 hours
  3. When ready to proceed, if using wooden skewers- fully cover them with water and leave to soak for at least 30 minutes before moving onto the next step
  4. Remove the steak/veg and potato mix from the fridge and set to one side. Pre-heat oven to 428˚F/220˚C regular oven or 394˚F /200˚C fan assisted oven
  5. To assemble your first skewer, pierce the skewer through the middle of an onion segment until the sharp end is near the top. Follow by adding a piece of steak, potato, pepper, potato, onion, steak, pepper, steak, potato. Pop onto the roasting rack and continue to make the next 3 skewers, following the same process
  6. To summarise- each skewer should have: - 4 potato -3 steak - 2 pepper -2 onion
  7. Pop the skewers into the pre-heated oven for 10-15 minutes. Remove from the oven and serve. Enjoy whilst hot
