Cranberry & Banana Bread Squares (low fat)

Ingredients

  • 3.5oz-100g low fat margarine
  • 10.5oz-300g bananas (mashed)
  • 1 large egg (beaten, free-range)
  • 11.2oz-320g wholemeal sliced bread
  • 1 tablespoon ground cinnamon
  • 0.5oz-15g sugar alternative
  • 1 tablespoon ground nutmeg
  • 2.6oz-75g dried cranberries
  • 11.9 fl oz-340ml semi-skimmed milk

Method

  1. Pre-heat oven with an over tray inside to 374˚f/190˚c regular oven or 338˚f /170˚c fan assisted oven. Grease a 20cm/8" square cake tin and set to one side
  2. Start by placing the bread and milk into a large mixing bowl to allow the bread to soak up all the liquid. Set to one side for 10 minutes
  3. Add the mashed banana, margarine, sugar alternative, beaten egg, cinnamon and nutmeg to the milky bread mix and combine using an electric hand-mixer/stand mixer
  4. Add the cranberries and mix one last time to distribute them
  5. Pour the mix into the pre-prepared tin and smooth out evenly. Pop into the oven for 40 minutes or until golden brown and you can insert a skewer into the center and it comes out clean. Remove from the oven and allow to cool in the tin for 10 minutes before removing to cool completely
  6. Cut into squares and serve
