Chocolate Crunch Biscuits (Approx. 24)


Biscuit Mix
  • 3.5oz-100g milk chocolate chips
  • 3.5oz-100g dark chocolate chips
  • 3.5oz-100g white chocolate chips
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • Pinch of salt
  • 10.5oz-300g light brown sugar
  • 10.5oz-300g plain flour (sifted)
  • 8.8oz-250g unsalted butter (melted)
  • 1 teaspoon vanilla essence
  • 1 medium egg (free-range)
  • 2 medium egg yolks (free-range)
  • 0.7oz-20g caster sugar
  • 1 tablespoon cocoa powder (heaped)
  • 3.5oz-100g white chocolate (melted)


  1. Pre-heat oven to 356˚F/180˚C regular oven or 320˚F /160˚C fan assisted oven and line a 40cm x 27cm (16x10 inch) oven tray with baking parchment. Set to one side
  2. In a large mixing bowl, add the flour, salt, baking powder, cinnamon and cocoa powder. Mix together using a wooden spoon and set to one side
  3. In a separate mixing bowl, combine the butter and sugars. Add the vanilla extract, egg and 2 egg yolks and combine until paler in colour. Sieve in the flour mix and combine again. Finally, add the chocolate chips and combine one last time
  4. Using your hands, roll out 6 balls of equal amounts of dough (not using all of the dough). Place on the prepared baking tray (spread out) and lightly squish the top of each ball with a fork (so that it leaves a pattern of vertical lines). Pop in the oven for 25 minutes. Remove and place the biscuits on a cooling rack to cool completely
  5. Meanwhile, repeat this process until you have used up all of the biscuit dough (this may take 3 or 4 batches- approx.24 biscuits in total)
  6. Once all the biscuits have been cooked and are completely cool, drizzle the tops with the melted white chocolate and set to one side for it to set
  7. Serve and enjoy!
