Burrito Baskets (Makes 12)

Ingredients

Filling
  • 17.6oz-500g lean beef mince
  • 1 large onion (finely chopped)
  • 14.1oz-400g kidney beans (drained and rinsed)
  • 2 red chilies (chopped)
  • 1 mixed chilli stock pot
  • 1 red pepper (deseeded & diced
  • 3 garlic cloves (crushed)
  • 2 teaspoons (heaped) chilli powder
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 beef stock pot
  • 14.1oz-400g tinned chopped tomatoes
  • 10.5 fl oz-300ml boiled water
  • Dark chocolate (thumb sized piece)
  • 14.1oz-400g tinned refried beans
  • 1 pack instant Mexican rice (microwavable)

  • 2 packs large flour tortillas
  • Sunflower oil to brush
Topping
  • Cheddar cheese (grated)
Garnish
  • Shredded lettuce
  • Sour cream

Method

  1. Preheat the oven to 392˚f/200˚c regular oven or 356˚f /180˚c fan assisted oven, with a baking try inside. Grease a 12-hole muffin tin and set to one side
  2. To start, make the chilli. In a large saucepan add some sunflower oil over a medium/high heat followed by adding the onion, chopped chilli and garlic. Cook for 5 minutes or until the onions are soft (not browned)
  3. Sprinkle the mince with salt and pepper and add to the pan, breaking it up with a wooden spoon continuously whilst cooking. Turn up the heat a little and add the chilli powder, paprika, ground coriander and chilli stock pot and stir for a further minute to combine the flavours
  4. Add the boiled water, beef stock pot, tinned tomatoes, dark chocolate, kidney beans and red pepper. Bring to the boil and stir well. Reduce the heat to a simmer and cover with a lid for 1 hour to reduce the sauce. Keep stirring at intervals. Remove from the heat and make a start on the tortilla baskets
  5. Using an upside-down pint glass, cut out four circles from each tortilla to make one basket. You will need 48 circles in total. Place one circle at the base of the muffin hole and brush lightly with oil. Add another circle to the side but connecting to the base and lightly brush the sides with oil. Add the third circle, again connecting the base and overlapping the side of the other previously laid side circle, brush with oi and then repeat with the final circle. Really squish them together to complete the basket. Repeat this process for the other 11 muffin holes
  6. Heat the refried beans and rice to manufacturer's instructions. Layer the cases with beans, followed by rice and then chilli on top. Pop into the oven for 10 minutes. Remove straight away and serve with cheese on top and shredded lettuce and sour cream on the side. Enjoy!
