Blueberry Oatmeal Bites©


Oat Mix
  • 10.9oz-310g Porridge Oats
  • 8.8oz-250g Plain Flour (sifted)
  • 1 teaspoon Ground Cinnamon
  • 7.4oz-210g Unsalted Butter (room temperature)
  • ½ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 7oz-200g Golden Caster Sugar
  • 3.5oz-100g Desiccated Coconut
Blueberry Filling
  • 17.6oz-500g Fresh Blueberries
  • 2.1oz-60g Golden Caster Sugar
  • 2 tablespoons Lemon Juice
  • 3 tablespoons Strawberry Jam
  • 2.4oz-70g Cornflour


  1. Pre-heat oven with an oven tray inside to 320˚f/160˚c regular oven or 284˚f /140˚c fan assisted oven
  2. Grease a 20cm/8" square cake tin and set to one side
  3. Start by making the oat mix. In a large mixing bowl, place all of the ingredients and mix together using a hand-mixer, stand mix or good old fashioned wooden spoon. Mix until it resembles a crumble texture
  4. Squish 2/3 of the mix into the base of the prepared tin using the back of a spoon so it is even and compact and set to one side
  5. Continue by making the filling. Blitz together all of the ingredients until well combined. Pour over the oat mixture that is already in the tin
  6. Sprinkle the remaining oat mixture over the top of the blueberry mixture until completely covered. Lightly press down with your fingers to create an even layer
  7. Pop into the oven on top of the pre-heated oven tray for 40 minutes until golden brown
  8. Turn the oven up to 374˚f/190˚c regular oven or 338˚f /170˚c fan assisted oven and bake for a further 15 minutes
  9. Remove from the oven and allow to cool in the tin for 30 minutes
  10. Remove from the tin and allow to cool completely
  11. Slice into large bitesize squares and serve or store. Perfect for mid-morning energy boosts!
