Bhaji Buns (makes 12)

Ingredients

Onion Mix
  • 2 tablespoons vegetable oil
  • 1 large onion (thinly sliced)
  • 1 potato (peeled & finely diced)
  • ½ teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ½ teaspoon ground ginger
  • 1 teaspoon mild chilli powder
  • 1 teaspoon curry powder
  • 1 teaspoon curry paste
  • 2 teaspoons tomato puree
  • 4 tablespoons water
Savoury Bun Mix
  • 1 ½ teaspoons red chilli paste
  • 4.9oz-140g plain flour (sifted)
  • 2 tablespoons unsalted butter
  • Pinch of salt & black pepper
  • 2 medium eggs (free-range, lightly beaten)
  • 1 ½ teaspoons baking powder
  • 5.7 fl oz-170ml semi-skimmed milk
  • Pinch of chilli flakes
  • 1 tablespoon fresh coriander (chopped)
  • 1.4oz-40g sweetcorn (ready to use)
  • 1.4oz-40g peas (ready to use)
  • 1.4oz-40g fresh mozzarella (finely diced)
  • 1.4oz-40g cheddar cheese (grated)
  • 2.8 fl oz-85ml olive oil

Method

  1. Pre-heat oven to 356˚f/180˚c regular oven or 320˚f /160˚c fan assisted oven. Grease a 12-hole loose bottom muffin tin (or use paper cases) and set to one side
  2. Start by making the onion mix. Using a large frying pan over a low/medium heat and add the onion, potato and turmeric and cook for 1-15 minutes (or until soft, continually stirring so it doesn't burn). Add the curry paste during the last 5 minutes of cooking
  3. Transfer to a large mixing bowl and add the other dry ingredients. Mix well and set to one side
  4. In a separate small bowl, mix together the tomato puree and water. Add the mixture to the onions and combine well. Set to one side to cool
  5. Continue by making the savoury bun mix. In a large mixing bowl add the sifted flour and baking powder, set to one side. in another large mixing bowl, add the oil, butter, pepper, red chilli paste, chilli flakes, salt and coriander. Mix well and add the beaten eggs gradually whilst continuously mixing
  6. Add half of the flour mix to the oil mix and stir well. Follow by adding half of the milk and combining again. Repeat this process one more time so all of the flour and oil mix is combined along with the milk
  7. Add the sweetcorn, peas, cheddar and mozzarella along with the onion mix to the flour oil mix and combine thoroughly. Equally spoon into the 12 holes of the prepared tin and pop into the oven for 20-25 minutes until the tops are starting to brown (but not too much!!). Remove from the oven and allow to cool in the tin for 10 minutes before removing
  8. Serve warm or cold
